Peppermint Patties
Ingredients:
- ¾ cups of sweetened condensed milk
- 1 teaspoons of peppermint extract or more your choice
- ⅛ teaspoons of vanilla extract
- 4 cups of powdered sugar plus some extra for sprinkling
- 3 cups of semisweet chocolate chips
- 2 teaspoons of shortening
- ½ cups of sprinkles
Instructions:
Step 1- To start off, place the condensed milk, peppermint extract and vanilla extract in a mixer’s bowl. Add half of the powdered sugar and beat with a mixer at a low speed. Gradually add the remaining powdered sugar while continuing to beat at a low speed; beat until a smooth dough forms.
Step 2- Now sprinkle powdered sugar over a piece of parchment paper. Place the peppermint dough that you just made on the parchment and sprinkle powdered sugar over the top of it. Roll it into a ½ inch thick circle.
Step 3- Next using a 1 or 1 ½ inch round cookie cutter, cut out circles from the dough. If your dough does not easily cut then simply place it into the freezer for a few minutes to firm up, and then try again.
Step 4- Transfer the peppermint rounds to a parchment lined baking sheet. Cover it and freeze it for 10-15 minutes.
Step 5- After freezing, place the chocolate and shortening in a medium microwave safe bowl. Cook at 30 second intervals until melted, while stirring occasionally.
Step 6- Now using a fork, dip the patties one by one in the chocolate, then place on a piece of parchment. If you do want to have sprinkles on them add them immediately (so they stick to the chocolate). Let it cool until the chocolate is set.
Step 7- Store them in the refrigerator and enjoy a delicious treat!
