Monthly Munchies: January

Ingredients:

  • 1 ½ cup cream cheese
  • 1 ⅝  cup  skyline chili
  • 1 cup cheddar cheese
  • Tortilla chips

For the meat:

  • 2 pounds ground beef
  • 2 cups chopped onions
  • 4 cups beef stock
  • 2 cans tomato sauce
  • 2-3 tablespoons chili powder
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 2 ¾ tablespoons cocoa
  • 2 teaspoons instant minced garlic
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon ground red pepper
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground cloves
  • 1/8 teaspoon bay leaf powder

Directions:

  1. First put the onions and the ground beef into a frying pan. Cook until lightly browned
  2. Drain any excess water if needed
  3. Add beef stock to the beef mixture and simmer for 10 minutes
  4. Next add the remaining 13 ingredients. Simmer uncovered for 25-35 minutes.
  5. Remove bay leaves (optional)

After you cooked the meat:

  1. Start off with preheating the oven to 375 degrees.
  2. Now spread the cream cheese into a 9 x 13” pan.
  3. Next pour the chili evenly over the cream cheese layer.
  4. Place pan in the preheated oven for about 10 minutes
  5. Remove from the oven, top with about a 1 cup of Cheddar Cheese (or your preferred cheese)
  6. Lastly let it cool off for 5 minutes, then enjoy with tortilla chips (or your preferred chips.)
