Monthly Munchies: January
Ingredients:
- 1 ½ cup cream cheese
- 1 ⅝ cup skyline chili
- 1 cup cheddar cheese
- Tortilla chips
For the meat:
- 2 pounds ground beef
- 2 cups chopped onions
- 4 cups beef stock
- 2 cans tomato sauce
- 2-3 tablespoons chili powder
- 2 tablespoons apple cider vinegar
- 2 teaspoons Worcestershire sauce
- 2 ¾ tablespoons cocoa
- 2 teaspoons instant minced garlic
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon ground red pepper
- ¼ teaspoon ground allspice
- ¼ teaspoon ground cloves
- 1/8 teaspoon bay leaf powder
Directions:
- First put the onions and the ground beef into a frying pan. Cook until lightly browned
- Drain any excess water if needed
- Add beef stock to the beef mixture and simmer for 10 minutes
- Next add the remaining 13 ingredients. Simmer uncovered for 25-35 minutes.
- Remove bay leaves (optional)
After you cooked the meat:
- Start off with preheating the oven to 375 degrees.
- Now spread the cream cheese into a 9 x 13” pan.
- Next pour the chili evenly over the cream cheese layer.
- Place pan in the preheated oven for about 10 minutes
- Remove from the oven, top with about a 1 cup of Cheddar Cheese (or your preferred cheese)
- Lastly let it cool off for 5 minutes, then enjoy with tortilla chips (or your preferred chips.)
