Monthly Munchies: July

  • Nonstick cooking spray, for the baking dish
  • 3 tbsps of unsalted butter, slices
  • One 10- ounce bag of mini marshmallows
  • 5 ¼ cups of crispy rice cereal
  • ½ tsp of blue gel food coloring
  • ½ tsp off red gel food coloring
  • ¼ cup of mixed, red, white, and blue sprinkles

  1. First prepare a 9 by 9 baking dish by lining it with aluminum foil, on opposite sides of the dish leave a 2 inch overhang on the two sides. Then spray the foil lightly with a general cooking spray.
  2. Separate the butter and marshmallows among 3 microwave safe bowls. Per bowl add 1 tablespoon of butter and 2 cups of marshmallows. Start by microwaving one bowl until the butter has melted and the marshmallows have become puffy, may be about 60 seconds but will be different due to the variety of microwave.
  3. Stir in blue food coloring into the bowl.
  4. Now working quickly, add 1 ¾ cups of rice cereal with a rubber spatula since it will be easier to stir. Once fully mixed, put it into the baking dish and press it down to the bottom of the pan. Then just set it aside for now.
  5.  Then repeat step 2 and 4 for another bowl.
  6. For the last layer repeat step 2. Then add in the red food coloring and mix it together.
  7. Next repeat step 4 for the final bowl.
  8. Let it sit at room temperature while it sets for about  30 minutes or until it gets firm.
  9. Now you can cut it into squares and enjoy a marshmallow treat.

A red, white, and blue treat for anyone to love. Wave your treat in the air, here comes the 4th of July.
